Pistachios have ancient origins, dating back over 9,000 years in the Middle East, where they were cultivated in Persia and Mesopotamia. From Central Asia, pistachios spread along the Silk Road to the Mediterranean, becoming a prized ingredient for the Greeks and Romans. During the medieval period, the Arabs introduced pistachios to Sicily, where the renowned Pistachio of Bronte is now grown, along with the equally prized Pistachio of Raffadali.
The pistachio plant is dioecious, meaning there are separate male and female trees. The female trees produce fruit (pistachios) only if pollinated by the male trees.
Pistachios are drupes, within which there is a hard shell that encases the edible seed. This seed is what we know and consume as the pistachio. The seed's color ranges from deep green to yellow-green, and this color is an indicator of quality: the greener the pistachio, the higher its quality.
